I do enjoy baking and not being Vegan or Vegetarian I never bothered with a substitute, but I do have vegan friends and they all bemoaned baked goods.

i haven't had any problems substituting vegan margarine for butter. with vegan cookies though, i have noticed that they get REALLY crunchy if you cook them too long so i add a tablespoon or two of applesauce with the margarine to make up for the milk-solids that are missing. the best one i've found is Organic Earth Balance Whipped Buttery Spread ... it's 100% vegan & doesn't seem to make white cupcakes as dark as some others have.
